Cartilage consists of 70% water that is bound to tissue proteins. Every time you move a joint, cartilage, absorbs the force by compressing and squeezing water out of the cartilage into the joint space. The water flows back in when the force is released, bringing with it nutrient that keep cartilage healthy.
Cells called chondrocytes constantly build and maintain cartilage. But in people with osteoarthritis, the ability of chondrocytes to make cartilage gradually slows. The cartilage gets rough or wears away entirely, causing painful friction as bone rubs against bone.
